Intensive Sheep Production
Dr. Marco Turco has a PhD in Agroecology and teaches 'Organic Farming' at SUNY Plattsburgh. He has over 30 years experience with both Intensive and Extensive livestock production; primarily 100% grass-fed operations. Dr. Turco is the owner and operator of Manzini Farm (Keeseville, NY) which is a sheep and beef farm that prides itself on being certified grass fed and certified animal welfare approved. The farm supplies grass-fed lamb and beef to high-end restaurants in Boston, New York City, DC and Philadelphia.

Gardening Ward Lumber Jay WardJay grew up in a family with a gardening tradition and participated in the family garden on and off. However
as an adult looking for good food, raised organically with a limited carbon footprint, Jay took up gardening
in a more serious way. Using a loose adaptation of the Square Foot Gardening method, Jay grows a
variety of vegetables in raised beds on his farm in Jay. Favorite veggies to grow include Sungold tomatoes
(technically a fruit), carrots, garlic, onions, potatoes, peas, kale and anything else his family will eat.

How to prepare BEFORE harvest day. Handling to minimize stress and eliminate bruising & breaking. Humane bleeding using cones. Plucking using Featherman Pro Plucker. Evisceration using proper techniques. Packaging using shrink bags to reduce freezer burn. Scalding using a Featherman thermostatically controlled, propane scalder.

Gardening Ward Lumber Jay WardHolly Ahern is professor of microbiology at SUNY Adirondack. As a result of her family’s personal battle with Lyme disease, she co-founded the non-profit organization Lyme Action Network which provides educational programs and literature on tick-borne diseases.

 

Dr Ronald Stram,is the Founder & Medical Director of Stram Center for Integrative Medicine who is an advocate for the Whole System Approach to preventing and treating Lyme Disease.
